Dr. Maurice Tibiru Apaliya is a Senior Lecturer and Head of Department of Food Science and Technology, Cape Coast Technical University. Dr. Apaliya had his BSc in Agricultural Technology from the University for Development Studies and an MSc Postharvest Technology from Kwame Nkrumah University of Science and Technology. He obtained his Ph.D. in Food Science and Engineering (Postharvest Technology option) from Jiangsu University, China. His research interest include: Biological Control of Postharvest Diseases, Postharvest Management of Perishable Produce, Food Preservation, Postharvest Physiology of Perishable Produce, Food Packaging, Mycotoxins among others. He is a Secretary of the African Society of Food Science and Technology (ASoFoST) and a reviewer of a number of journals. He has 43 publications in peer-reviewed journals. As an alumnus of Ghana’s premier university in the north, UDS has impacted greatly on my life. UDS is the foundation block of my social and academic life both nationally and internationally.
